Tim has worked in and managed some of the finest restaurants in the country, including The Water Club and World Yacht club in New York city. In Aspen, he has managed such notable restaurants as Abetone, Syzygy and the Caribou club. He and Alan began their working partnership at Carnevale Ristorante, continuing on to Jack’s at the Sardy House and then launching Custom Catering (now Aspen Chef) in 2005 with Tim heading up the fine dining department. Tim’s good nature, knowledge of the valley, and fine dining experience continue to be an integral part of Aspen Chef.
